Blackberry Cottage bakes cakes with a difference - the largest ingredient is a vegetable. 

Vegetables in cakes have been around for hundreds of years, we’ve all heard of carrot cake. Blackberry Cottage has taken it one step further and designed a whole range of vegetable cakes.

Their ultimate aim was to make the vegetable the biggest ingredient in the cake but still taste like a regular cake, and they've certainly achieved it. By introducing vegetables in such large proportions, it's possible to reduce refined sugars and fats, in some recipes, none are added.

Blackberry Cottage lies in the heart of the Berkshire countryside, baking every day, using local ingredients and suppliers, including eggs from their own chickens.

Blackberry Cottage has an online shop supplying customers with cakes by post or for collection, as well as supplying Coffee Houses, Farm Shops and Delis when they're back open. Kate runs a highly acclaimed cookery school - which is currently online, is the author of Cakes with Secret Ingredients from Aubergine to Zucchini and is regularly asked to give talks and demonstrations.
